
Picture shows Eggplant with Tomato Rasam
Ingredients:
Eggplant – 1 big (diced)
Onion – ½ a big onion (diced)
Tomato – 2 nos. (diced)
Green chillis – 2 nos. (halved)
Sambar powder – 2 tsp
Tamarind paste – ½ tsp
Hot water – ¾ cup
Salt
Oil
Preparation:
Saute the onion and green chilli well, add the tomato and cook it for 2 mins. Now add the eggplant and cook it covered for another 2 mins. Add the sambar powder, tamarind paste, salt and pour in the water and cook it until the eggplant is soft and tender.
Note: Look for smooth, shiny skin with a firm but slightly springy texture. Avoid soft
or brown spots while getting an eggplant.
Tip: If you don’t have sambar powder, you can substitute chilli powder and
turmeric powder for it.
