
Meat stew
Ingredients:
Meat – 3 lb chicken or mutton(goat)(cut into medium size cubes)
Onion – 3/4th of one onion( chopped)
Potato – 1(peeled and cut into medium size cubes)
Green chile – 3 nos(halved)
Ginger – I tbsp peeled and chopped
Coconut milk – 2 cups
Water - 3 cups
Rice flour – 1 tbsp(thickening agent)
Ground black pepper – ½ tbsp
Garam masala or Curry powder – ½ tbsp
Curry leaves(optional)
Salt
Oil
Preparation:
Heat the oil and splutter the curry leaves. Add the onion, green chile and ginger and sauté it for a minute. Now add the potato and sauté it for another minute. Stir in the curry powder and add the meat. Cook it covered for 2 mins. Add the coconut milk, water, salt, pepper and the rice flour and cook it through.
Note: If you don’t have rice flour, all purpose flour is the best substitute for it.
Tip: You can serve this with Bread, Idiappam, Vattiappam or simply can serve it
as soup (chowder)

Low – fat milk + ¼ tsp coconut extract = 1 cup light coconut milk.
