
Ingredients:
Chicken drumsticks – 10 nos(skinless)
Basmati rice – 5 cups
Hot Water – 10 cups
Onion – 1 ½(diced)
Tomato – 4 nos(diced)
Green chilly – 5 nos(halved)
Ground ginger – 1 tbsp
Ground garlic – 1 tbsp
Mint leaves
Cilantro(chopped)
Ground cinnamon, cloves, cardamom – ½ tsp each (or) 3 cinnamon sticks, 6 whole cloves and 6 whole cardamoms.
Turmeric powder – 1 tsp
Chilly powder – 1 tsp
Lemon juice – 1 tsp
Salt
Oil
Preparation:
Warm the oil and add the cinnamon, cloves and cardamom. Now add the mint and cilantro. Stir in the onion and green chilly and cook it well. Add the ginger, garlic, tomatoes, turmeric powder, chilly powder and cook it for 2 mins. To it add the chicken and little salt and cook it for another 5 mins. Pour in the hot water and add salt. Add the rice to the boiling water and cook it through. Add the lemon juice in the last minute of cooking.
Note: Add 9 cups of water first and if it needs more water add one more cup
of boiling water, that way you can avoid overcooked rice.
Tip: You can add a tbsp of butter with the oil to increase the richness of the
biryani.
